More Chocolate & Blessings

I wanted to post another Chocolate Recipe for Valentine's Day..but before I do I have to take a moment to count my blessings.

You know that each one of us were to stop and think about the blessings in our lives....on a daily basis we could count them in the hundreds..really! Our family, friends, work, church, faith, clothes, food, house...the fact that I got a good parking spot at church last night...blessings are truly abundant.

But sometimes we are blessed with the bigger blessings...and man have we been blessed this week.

Sunday we sold Brian's car in 4 1/2 hours!! Yes..we posted the car on Craigslist at 2:30 and it drove away with a new owner at 7:00!! Monday we were able to buy Brian a new truck. He has wanted a Ford Ranger Extended Cab for a LOOOONNNGGGGG time...and he got one!!
Monday Brian also was able to accept a new job that is going to help him take another step in his skills. Blessings, Blessings, Blessings. We are really overwhelmed and so very thankful.

God is good all the time, whether I can see what he is doing or not, but this time did He EVER show us just how good He is!!

A new path in life is exciting!! Just had to share.

Okay..now here is my MIL's favorite dessert I make. She requests it when she comes to visit. Easy to make ahead and bake off when company arrives.

Molten Chocolate Cake
Yields 2 cakes

1 ½ oz semi-sweet chocolate, finely chopped
½ oz unsweetened chocolate, finely chopped
3 TBS. unsalted butter , softened, ( plus 1 tsp.)
3 TBL sugar
1 large egg
3 TBL All Purpose Flour
¼ tsp baking powder
½ TBL unsweetened cocoa powder

Cocoa powder and whipped cream for garnish

Homemade whipped cream:
Place heaving whipping cream into a mixer. Set on high, after a minute add vanilla and sugar to taste. Keep mixing until thickened.

For cakes:

Lightly butter 2 ramekins w/ 1 tsp of butter, set aside
In the top of a double boiler place the semi-sweet and unsweetened chocolate. Stir occasionally until melted
Remove from heat and stir in 3 TBL butter and sugar until smooth
Add eggs, flour, baking powder & cocoa
With an electric mixer, beat on med-high speed until pale & very thick, about 5 minutes. Place mixture in prepared ramekins filling about ½ full.
Cover with plastic wrap and freeze for at least 3 hours
When ready to serve, Preheat oven to 375 degrees
Place ramekins on the middle shelf in the oven and bake until edges are set but centers are still shiny-about 10-11 minutesInvert cakes onto plates and powder with cocoa and garnish with whipped cream.

Oh it is!!! And really..its a little "prep intensive" but it is not hard..and sooo worth it!

As far as blessings go, I'd have to say : I'm oh so grateful for your MIL.
