Please, please, please make this. It is amazing!! and my red meat lovin' husband PREFERS this chili over my all ground sirloin, no bean chili! So that aughta tell ya something! Enjoy!

Nanna's Turkey Chili

4T Olive Oil
1 lg onion, chopped
2 med. green pepper, chopped
2 med red pepper, chopped
6 cloves of garlic, minced
2T Chili Powder or less depending on your taste
2T ground cumin
2 lbs. lean ground turkey
2 cans pinto beans
2 cans 14.5 diced tomatoes
2 ½ cans of Rotel Tomatoes
1 sm bunch of cilantro stemmed and chopped
1 ShinerBock Beer
Juice of one lime

Heat oil over med heat, when hot add onion & peppers and cook for 5-10 minutes or until soft. Add garlic, chili powder, cumin and cook stirring 2-3 minutes. Add turkey and cook, stirring until no longer pink. Add beans and tomatoes with juice and bring to a boil. Reduce heat and simmer uncovered 20 minutes.
Stir in lime juice, cilantro and season with salt and pepper to your taste.
Enjoy!!

Birthday Fun and a Celebrity!

Wednesday this week Brian and I packed our bags and headed north to Oklahoma. Thanksgiving this year was with his family and we have had a wonderful time. This year something unique happened as I shared my birthday with Thanksgiving! It has happened a few times in my life and the first time I was 7 and had the chicken pox!

Thursday was a wonderful day and I had so many Birthday wishes and a wonderful gift from my sweet husband. My MIL had already asked if I wanted to do birthday stuff on Thursday or another day and I had shared that we can do whatever is easiest and less stressful. SO...all I knew was that we were to leave the house around 9:00 this morning for a full day! Of what? I had no clue!

So we load up in the car and I am handed a gift and told to promptly read the card...which stated "DO NOT OPEN UNTIL 1:00!". So I follow said instructions and placed the gift at my feet. I truly know very little about the geography of Oklahoma and had it not been for an occasional sign I would have been clueless as to where we were headed.

After about 30 minutes I had figured out that we were headed to Stillwater!! Eskimo Joe's MUST have been our lunch destination!! Oh I was RIGHT!! We arrived around 11:00 and had a great plate of burger and fries!!

Back in the car to our next destination and now at this point, CLUELESS does not even begin to describe me. I can read signs but they mean nothing to me! We had about an hour until our destination so I enjoyed the countryside and played a little Nintendo DS. As we approached the town (this I knew by the discussion in the front seat) I began to look around and learned that we were in Ponca City, Oklahoma. It is now a little before 1:00 and I am told I can now open my gift. I read the card and open the gift bag.

I let out a squeal of delight!! I had put the cookbook on the list of birthday ideas and I had plans to go stand in line this coming Tuesday night in Dallas for her to sign SOMETHING. But now here we were..waiting in line to MEET THE PIONEER WOMAN!!! aka Ree.

We entered this quaint bookstore and got our ticket for the line. I was #96 in line and therefore had a nice wait ahead of me. Not a problem, the store had tons to check out and free wi-fi so I was good to go!!

I bought THIS lovely scarf while waiting.

I know, I know..get to the good part!

Here is Ree signing books for others in the store. The set up was perfect for being able to watch and hang out while waiting your turn. She brought one of her punks (aka kids) with her. Her daughter was very sweet.

So just over 2 hours after we arrived it was MY turn!! Ree was just as nice can be!!! I shared with her that this was my birthday present and she wished me a happy birthday..TWICE!!!

It was totally cool to meet her and I have already read half the cookbook..and yes..I have READ each recipe so far!!

BONUS: On the drive home, Brian noticed the entrance to the ranch..The Drummond Ranch!!! Yes..we drove RIGHT by the ranch!! Could see the roofs of the house and lodge from the road!!
Now remember how I said I have no geographical understanding of Oklahoma? Well I truly have NO idea where we were but we DID see the ranch!!

Thanks to my wonderful In-Laws for such a great day!!

A time for Thanks!

Well as you all know this is the week of Thanksgiving. I truly do love this week and always have. I look forward to time with family and friends, good food and just good fun.

Thanksgiving in its origin was begun to give thanks to God for all He has provided. Thanksgiving is a time when we all stop and think about our blessings and that is wonderful. But why don't we do this everyday? If you are like me...the blessings in my life are abundant but how often do I grumble instead of giving thanks.

I am accepting a challenge from a blog I read to stop and give THANKS when I want to grumble instead. When I frown at the pile of dirty dishes in the sink I will stop and be Thankful for the food we enjoyed that sat upon those plates. When I don't feel like working out I will be thankful that my lungs work, my ability to move is not limited and workout with a smile (this one will be hard!! :-) )

So will you join me? Will you be thankful everyday this week? And maybe even continue this effort beyond Thursday! If you accept this challenge then leave a comment here and go ahead and post something like this on your blog. Let's spread the THANKSGIVING!!

Well I can't believe that we only have 5 school days left and then we will be on our Thanksgiving Break. I think each year the time goes by more and more quickly.

The Death Star and Pumpkins

Well I know you are thinking.."The Death Star and Pumpkins"? what on earth??? Well those were our weekend events!!

Friday night we went to see Star Wars in Concert at Cowboys Stadium (aka The Death Star). A full orchestra played the music from all the movies while clips from the films flashed across the very large screens. It was quite an event! There were also movie props stationed around the stadium for the fans to check out. Many of the items had never before left Skywalker Ranch (George Lucas' homestead). The original manuscript for some of the music was on display and it was quite amazing.

Here are some pictures from the night! We had a great time and my amazing, Star Wars obsessed husband really enjoyed the show.

And since we were already up passed our bedtime AND hungry, we ended up at Denny's. I have now decided that I much prefer Denny's over IHOP. Maybe it had something to do with the Pancake Puppies they serve. Like hushpuppies, except not cornmeal, pancake batter!! There's a picture below of those also!! I think those should be the next fried delicacy at the Texas State Fair in 2010!!

Now on to the Pumpkins!! Threes years ago Brian and I began our tradition of carving pumpkins for Halloween. Usually the weekend before Halloween we make a trip to the store to select 2 perfect specimens to carve up. Here you can see our 2007 creations and here you can view the 2008 creations.

State Fair and Fried Food...It Must Be Fall!!

So its fall in Texas and one our favorite times of the year. It isn't because of the weather, because that changes daily. It isn't because of the beautiful fall foliage because pine trees just turn brown. It isn't because of football...oh wait..maybe that is one of the reasons! But one of our favorite Fall Things is the Texas State Fair.

Here you see our first stop once entering the fair grounds. THE Fletcher's Corny Dog stand. 2 dogs, 1 of which is slathered in mustard (that would be mined) and then around the corner to grab an ice cold root beer.

Charity..this dog was for you!!! I only ate one..but I thought of you with every bite! I know I was suppose to eat 7 in honor of all my friends that couldn't go and one unborn babe...but I don't believe I could have made it to the car!

Oh but I do believe every bite would have been amazing.

Now on to the 2nd course of our Fried meal!! Tornado Twisters!! I can't turn down a potato EVER...and these are amazing!!!

Now this is decadent!!! Each year we each get something Fried & Sweet. Brian always picks the traditional funnel cake. Me, I like to walk on the wild side. Meet the Fried Peanut Butter Cup Macaroon!! OH MY!!! Yes you heard me right!!! Here is the fresh, hot fried delicacy!

Here it is with a few bites gone!! See the lucious peanut butter and chocolate!! and then that sweet oozy layer of coconut heaven!!!! It was worth EVERY bite!!
And as I say each year..I am glad we only do this ONCE a year!! This was Brian and my sixth year to go to the fair, a tradition we began the first fall we were dating! Good stuff!!

Birthday Time!

This past Monday was Brian's 36th birthday. We celebrated all weekend long until Monday evening. Now don't get any crazy ideas about our celebrating, it was all relatively calm! :-)

Saturday we got to have lunch with Rich and his dad. They were in town to see the Arkansas Razorbacks play A & M at the new Cowboy Stadium. Rich is an old friend from college days. Now having lunch with these guys didn't have anything really to do with Brian's actual birthday but it was part of our weekend and its always a good thing to hang with a good friend.

Saturday night we went to see our DALLAS STARS in their Home Opener. Great game! Too bad we lost. But Brian and I never miss the chance to watch some hockey.

Sunday after church we went to see a double feature, Toy Story 1 & 2 in 3-D. Very cool, very fun. We were the only adults in the theater that didn't have a child attached to them. Oh and the 3-D glasses were quite the trendy look! We were channeling Harry Carey.

Sunday night I baked part 1 of Brian's birthday cake. A delicious Tres Leches cake was in the works and by Monday evening it did not disappoint!

Monday was B's actual birthday and after a long day at work we had dinner at Red Robin. My husband can never turn down a good burger. I had invited friends over to share in our celebration and in the cake!

A great time of celebrating the wonderful man I am blessed to be married to.

Did you know that Butternut Squash can cause Contact Dermatitis? See I had never had butternut squash before and a friend was recently telling me about how she prepares it. Well it sounded simply divine so I picked up a beautiful specimen at Sprouts this week. Brian grilled a couple of steaks out on the balcony and I went to work on the side items. Asparagus and butternut squash were on the menu.

I sliced open the squash, cleaned out the seeds, oiled up the cut side, placed it on a cookie sheet and into the oven it went. I cleaned my knife, put the cutting board in the sink and went to the computer to check email, since the cook time is around 50 minutes. As I began clicking around I noticed that my finger tips on my left hand and part of my palm began to feel really tight. The skin in those areas began to smooth over and continued feeling tight. I went to the bathroom and washed my hands thoroughly thinking that I simply did not wash off all the squash juices. Returning to my chair and resuming my web surfing I noticed the tight feeling was not changing but getting worse.

Now at this point I was beginning to worry. I have never touched or eaten butternut squash before and my initial experience here is not starting off well. Well since I happen to be sitting at my computer and we know that the internet has every answer, I fired up the browser and a surfin' I went. I found THIS webpage and learned about the Contact Dermatitis.

Now I have no idea how common this issue is but since I only got a few hits on my search I am thinking I fall into the "rare" column on this one.

So what is the treatment? Wash hands (area) thoroughly and treat with a little cortisone cream. So I did that very thing and my fingertips seem to be on the mend. They no longer feel tight but they do look a little flaky. Ick. I know.

Now what else did I learn from this new endeavor? I LOVE butternut squash!! It was really delicious and super easy to prepare. So add one to the Veggie column!! And since its officially Fall I should have no shortage of my new squashy friend!

Here's how I prepared it.

1 Butternut Squash
Olive Oil
Butter
Cinnamon
Salt
Pepper

Preheat your oven to 400 degrees. Spray a cookie sheet with no-stick spray OR cover a cookie sheet in foil for easier cleanup (I will be doing this next time)

Wash squash. Dry squash. Cut squash in half lengthwise. Hint: start in the middle and cut down, turn squash, start from center again and cut the other half

Clean out the seeds and stringy part. (much like a pumpkin)
Now coat cut sides with olive oil and place face down on prepared cookie sheet.

Bake for 45-55 minutes until done. You can easily poke with a fork when done.

Now scrape the pulp out of the shell and place in bowl. Add butter, cinnamon, salt and pepper to taste.

Amazing!!!

Oh..and use gloves if you don't wanna take a chance of being weird, and now scaly, like me!

Bad Blogger...Bad Blogger!!

Well as you can tell..I have not blogged in a couple of weeks. School has started and is off to a very fast start. I have good classes even though they are large classes. I think my largest class has 28 and my smallest has 12. I am currently caught up on grading papers but that won't last with tomorrow's quiz. This year I am pleased to say that I am ONLY teaching. What do I mean by that you ask?

Well I have been at the high school for 11 years now and for the past 9 I have had an additional duty or responsibility. Everything from cheerleading, committee work, Renaissance to club sponsor...I have done it all. Last year I made the decision to reduce my work load and my stress level so I passed on Renaissance to another teacher. Six years was quite enough.

I am enjoying just teaching and trying to spread my wings a bit more with being creative and reenergized in the classroom. We also were blessed with a new language lab last year and after spending a year figuring out the system I am ready to get creative!

Brian and I have also been looking for a new Bible Fellowship (Sunday school) class at church. Back in the spring we both knew we had heard clearly from the Lord that our time as class directors had come to an end. We were blessed to be a part of the Truth class for over 3 years and we have so many wonderful friends as a result of being a part of that class.

This summer we have visited lots of classes at church and met tons of amazing people and heard the Lord speak in all of the lessons we heard. Recently we really felt good about a particular class and I think we will visit again this weekend. We are anxious to get settled into a class and get busy serving but at the same time we don't want to force anything. We truly just want to be lead by the Lord for our next place.

The weather has made an abrubt turnabout! As I sit here typing the balcony door is open and we feel the most pleasant breeze. The rain has kissed the earth this evening and it feels wonderful!! I sure hope that this glimpse of fall does not depart any time soon! Its September and in Texas that usually still means hot and humid! But for today I will be greatful!

I do hope the rain holds off come Saturday evening because we have tickets to the Brad Paisley concert at the Superpages.com Center down near Fair Park. We have lawn seats so kinda hoping the weather will be lovely!!

OKC Vacay!!

We had a great time this past weekend hanging out in Oklahoma City. Brian took a half day off from work on Friday and we were on the road by 1:30. We had an easy drive up and arrived around 4:30. Brian's grandfather and his wife live in OKC so we buzzed them up and out to dinner we all went. After a great meal we headed over to Lake Hefner. A beautiful lake with a walking path, a lighthouse, and lots of sailboats! Lake Hefner is special to Granddad and Sylvia because it is the place of their engagement! We saw the very bench they were sitting on when Granddad asked for her hand in marriage!! So sweet!! After the lake we headed to their house for some good old visiting!! I love visiting with family!

Saturday Granddad and Sylvia kept us busy!! After a lovely breakfast we headed over to the Oklahoma City Memorial and Museum. April 19, 1995 was a tragic day for our nation and the people of Oklahoma City. The memorial and museum created are truly a place of honor, respect and remembrance. If you are ever in OKC I strongly encourage you to visit the memorial and museum. It is very well done and a beautiful place.

Next we visited the Oklahoma City Museum of Art. There is currently an exhibition being held "From Turner to Cezanne" and glasswork from Chihuly on display. We saw paintings by Renoir, Monet, Cezanne, Turner and so many more. Chihuly is famous for blown glass and his pieces are diverse, beautiful and huge!! I don't think he knows the definition of small.

Next we headed downtown to Bricktown where OKC has worked diligently to enhance and grow the downtown area. There is a canal, warehouses turned into restaurants, the ballpark for the Red Hawks, art museums and so much more. We had a Sonic break and Sylvia drove us around to show us what all Bricktown has to offer.

After a busy morning of sight seeing we headed back to the hotel. Granddad and Sylvia dropped us off, said goodbye and headed home. We took a moment to rest, freshen up and then back to Bricktown we went.

We enjoyed a nice meal at Bricktown Brewery then we headed down to the canal for a ride on the Water Taxi. The night was beautiful and the breeze helped you forget the warmer weather. Two stops by the Bricktown Candy Store and we had 6 bottles of fun sodas and some italian ice cream.

Sunday morning we had some quiet time back at the lake. The wind was blowing, the sun was warm and the time was peaceful. I think we should all have church by the lake every Sunday!!

There was one place left that we were determined to visit before heading home. Stillwater!! Where the air is clean, the OSU Cowboys play and Eskimo Joe's is slinging out burgers and fries!! It takes about an hour from OKC to get to Stillwater so we headed north. We had a HUGE lunch at Eskimo Joe's, bought a few souvenirs and then went to check out the campus and take a few pics.

With a full tank of gas and full bellies we headed home. Our weekend getaway felt more like a week long getaway. Very restful, very enjoyable!!

The Survivor Tree is seen below. This once frail tree was burned and scarred from the bombing. Since then it has been nurtured and cared for. The beautiful elm grows in honor off those who survived and in remambrance of those lost.
This 3-story piece of blown glass is a signature piece for Chihuly. Truly amazing.

Vacation!!

Well its going to be shorter than planned and it is happening later than planned..BUT its happening nonetheless!!! (a broken toe delayed our plans just a tad)

A weekend away with the hubs. We are looking forward to some down time, some sleeping in and flying by the seat of our pants!!! We will have the chance to visit with family and that is something we always enjoy.

12 Pages in 2 Days!

Not a bad weekend of scrapbooking!! I have finished 12 pages so far and am only at the summer of 2007. Once those are done I will have to go back and print out pictures from the holidays to add to the album. It is amazing how exhausting scrapbooking can be!! I guess its all those creative juices flowing and all that girl talk that just wear ya out!! Anyway...a very fun way to spend the weekend.
Plus I am now motivated to get 2007 finished so I can start 2008..and STILL be behind!!

Summer..its almost over

Well the new countdown has begun..the one leading up to school. Although this one I will simply let happen and not actually COUNT! There's no fun in that!

Its the end of July and we have had rain and temperatures in the 80's this week..WOW!! Talk about different!

This summer has been different and a bit unorganized but overall...a thumbs up.
I have tried to make it to the gym more days than not. I have had lunch and coffee with friends, some I see often some not for years. I have watched a few movies, enjoyed date nights with the hubs and managed to sleep a little!

I always enjoy summer and being off but sometimes I don't know what to do with myself. I go from a totally scheduled and routined life to one completely NOT routine and my schedule is mine to do with as I please.

School will start up soon and I will have about 160 new faces to learn and 160 new personalities also! I always look forward to the new crew. I pray for my students and the new year. I always hope to teach my students more than just a subject matter.

So let the countdown continue and bring on year 13!! (of teaching that is)

For now...2 whole days of scrapbooking!!! Oh and a sleepover!! Gotta be up early and get those creative juices flowing!! And hopefully...LOTS of pictures properly cropped and into an album!!

Tried a new class at the gym today. Zumba!! Basically...one hour of salsa moves while shakin your tushy!! Got a great workout, had fun and my Mio Watch tells me I burned 700 calories!! This might be my Monday morning summer time workout!!

How something so small can cause so much pain!

It is truly amazing to me that some of the smallest things in life can bring the greatest pain.
Like for instance the paper cut. We have all had one and those stinkers can really hurt! A precisely place paper cut can render one's hand almost useless!!
What about a spinter? I recently had the tiniest shard of metal in the very tip of my right index finger and I became instantly disabled. I could not seem to function until this small object was removed.

Ever had a broken toe? Our toes are truly not very big in comparison to other parts of body but man they sure can change your life if one is broken. That very thing is what our household is dealing with this week.

This morning my husband broke his toe at work and suddenly the world no longer functions as it did before!

First let me say I am so very thankful that this work injury is merely a toe because in the land of Collision Repair there are multitudes of power tools, chemicals and heavy objects and just as many opportunities for injury. Brian has been in this new career for over 3 years and this is our first major injury. PTL!

But back to the TOE...that small little part of your foot that is so very necessary for walking, running, and balance. Break it..and NOTHING is the same!! Can't walk the same, cant' climb stairs, can't even sit or stand without great caution all because of a broken toe.

So my wonderful dear Hubs is layed out on the couch, foot properly elevated and watching a little Brian Regan for some comic relief. Not a bad way to spend a day, except for the throbbing big toe at the end of his leg! But thankfully the pain medicine is starting to do its job and relief is on its way.

Let's Celebrate!

Fireworks, Food, Family, Friends and Fun!! Why do we all make such a fuss on this day? Well let's actually take a moment to stop and think about that because sometimes we don't.

We celebrate the day the United States declared independence from Great Britain and the United States of America began an amazing journey which we are still experiencing. The freedoms that we enjoy today began back in 1776.

We also take time on this day to say a huge THANK YOU to all the service men and women that have served in all areas of our armed forces. To those you have given their lives to protect our freedoms and the freedoms of others, to those who have faithfully served and to those who are currently serving...I personally could not be more appreciative.

For those who have gone before me have blessed me. I enjoy so many freedoms everyday but mostly I have the FREEDOM to worship. The freedom that I do not have to hide my faith or my love for Jesus Christ, my Lord and Savior. For that alone, I am eternally thankful.
