Fall is in Sight..so Cooking Changes

We are so very thankful that the temperatures here in Texas have dropped and we can feel Fall approaching.  When Fall arrives things in the kitchen change. By that I mean, time for THOSE recipes. The recipes that are comforting, yummy, and usually cook long and slow.   Here is the first of those for the season, except there is no Long and Slow to it..this is a fabulous comfort food that's ready in less than an hour. 

Nana's Turkey Chili
(Nana is a dear friend of mine, her name is actually Connie, but those that know and love her..call her Nana.  She adapted this recipe from another she found a few years back)

4 T. olive Oil
1 large onion, diced
2 medium green bell peppers, diced
2 medium green bell peppers, diced
6 cloves garlic, minced
2 T chili powder (more if you prefer)
2T ground cumin
2 lbs lean ground turkey
2 cans pinto beans
2 cans diced tomatoes (14.5 oz each)
2 1/2 cans Rotel tomatoes (I only use 2 cans and its fine)
1 small bunch of cilantro, stemmed and chopped
Juice of one lime

Heat oil over medium heat and then add onions & peppers.  Cook for 5-10 minutes until vegetables are soft. Add garlic, chili powder, & cumin.  Cook 2-3 minutes while stirring constantly.  Add turkey and cook until no longer pink.  Add beans, tomatoes & Rotel (juice and all) Bring to a boil then reduce heat to a simmer.  Simmer uncovered for 20 minutes.   Add lime juice and cilantro at the very end.  Season with Salt & Pepper to taste.

Welcome Fall, indeed! After the summer we had, everyone is so ready for fall. Am looking forward to my first cup of hot chocolate! :)
